This one pan dish is so incredibly easy to make and makes enough to feed your family and have leftovers!

Along with being so easy to make, this dish is so nutritious! With a good hit of protein from the beans and chicken, you are also getting numerous veggies, carbs from the rice and if you top with avocado, you get a great source of healthy fat! A well balanced meal that leaves you feeling satisfied.

We use the Mingle Taco Seasoning in this meal as it does not have any additives. If you cannot access the Mingle seasoning, feel free to replace this with your own favourite taco seasoning or a homemade taco seasoning.

If you are vegetarian, you can easily replace the chicken with firm tofu and this dish works just as well! You could also replace the chicken broth with veggie broth.
